Beefy Rice Skillet

This Beefy Rice Skillet is one of my favorite go-to dinner recipes. A Creamy, beefy rice skillet with your vegetables of choice. “Beefy Rice” is what my family calls it. They love it because it’s delicious every time and I love it because its a simple, healthy and homemade dinner that costs under $12 to feed my family of six!

This meal is great for any busy parent! And it’s all cooked in one pot!

INGREDIENTS

  • 1 lb ground beef
  • 1 1/2 rice of choice
  • 1 cup vegetables of choice
  • 3 tbsp flour
  • 1 cup milk
  • 2 cups chicken or beef broth
  • 1 tsp garlic powder
  • 1/2 tsp crushed oregano
  • salt and pepper to taste
  • 1/2 cup shredded cheddar (optional)

DIRECTIONS

1- Brown ground beef with vegetables and spices in a large pot.

2- Add flour and stir for about 1 minute

3- Stir in the rice, milk and broth. Bring to a boil, reduce to low heat and cover for 15-20 minutes. Stirring occasionally.

4- Top with cheese (optional) and serve.

Make This Beefy Rice Skillet Your Own!

This recipe is convenient, so use whatever vegetables you have on hand! Often I will use anything from frozen vegetables to fresh broccoli and spinach. Switch up the ground beef for ground chicken or turkey. Really make it your own!

If you don’t have milk or broth on hand a can of mushroom soup is what I like to use sometimes. Cream of chicken, cream of broccoli, or cheddar soup all work just as well with the equal amount of water in place of the milk and broth.

On another note- Leaving out the milk, broth and even soup can be done. It’s a tad less creamy but really just as delicious! Just add the rice with 3 cups of water in places of the milk and broth.

This rice skillet takes about 40 minutes to make from start to finish, however 20 minutes of that time it’s covered and simmering. During this time I like to tidy up and when I’m finished, dinner is ready!

This Beefy Rice Skillet has easily became of of our family favorites! It’s cheap and simple to make, but also healthy and homemade, and since it’s all in one pot there’s always less dishes making this dinner a winner in my recipe books!

  • 1 tsp garlic powder
  • 1/2 tsp ground oregano
  • salt and pepper to taste
